How To Make Indian Somasa's

Samosa is a commonly eaten savory snack in India. The filling usually consists of spiced potatoes, onion, peas, coriander, lentils, minced meat, or sometimes fresh paneer. Here, we are going to substitute a minced meat filling.

Ingredients

  • 500 g minced meat (lamb, beef, chicken)
  • 4 tbsp oil, for frying the lamb
  • 1 tsp salt, or according to taste
  • ½ tsp chili powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garam masala powder (see How to Make Garam Masala)
  • 1 tsp turmeric powder
  • 1 ½ medium onions , peeled and finely chopped
  • 1 small bunch fresh coriander leaves, chopped
  • 1 medium beaten egg, for sealing samosa pastry
  • 1 packet samosa pads or filo pastry
  • 2 tomatoes, chopped
  • 125 g frozen peas

Steps

Making the Filling

  1. 1
Heat the oil. In a large frying pan, heat the 4 tbsp of oil.

  2. 2
Fry the onions. Over a medium heat, stir fry the onions for about 1 minute. Now add the spices and chilis and fry until onions are golden brown.
  3. 3
Add the meat. Now add the minced meat and fry it until it is browned. Stir for a few more minutes and add peas.
  4. 4
Cook the meat. Cover and cook on a low heat for 20 minutes until the meat is cooked (tender). Add oil if the pan seems to be too dry and make sure you stir it occasionally. Add salt if necessary.
  5. 5
Turn off the heat and let the mixture cool .

Making Samosa Cones

  1. 1
Preparing the cone . Take a sheet of the ready made samosa pad or 2 sheets of Filo pastry and make a triangle cone by folding the edges around themselves and sealing the edges with the beaten egg using a pastry brush. Make sure to leave one side open to add the filling.
  2. 2
Fill it with meat mixture. Now fill the samosa cone with minced meat. Lift and pinch the corners together and continue along the seam towards the corner. View the video to see how this is done.
  3. 3
Cover the finished samosas with a moist cloth as you continue to make more.
  4. 4
Deep fry the samosa gently until it they are golden in colour on each of their sides. Do not fry them fast as it may make them stiff .
  5. 5
Serve hot with a ketchup and enjoy with your family and friends.

1 cup milk
2 medium eggs
1/4 cup oil
2 tablespoons sugar
1 teaspoon salt
2 teaspoons baking powder
1 1/3 cups corn meal
2/3 cup flour
1 to 1-1/2 pounds hot dogs
flour for dusting (about 1/2 cup)
Hot Fat for Deep Frying
Popscicle sticks
In a large bowl combine the milk, eggs, oil, sugar and salt. Mix it very well. Sprinkle in the baking powder, corn meal and flour. Stir it all up to make a slightly thick batter.
Take your hot dogs and dry them off on paper towels. Dust the hot dogs with flour, coating them completely. The cornmeal batter won’t stick to the hot dogs unless they are coated in flour. The batter just slides right off of the wieners naturally slick outsides. Shove popscicle sticks into the flour coated hot dogs. Set the hot dogs aside.
While all of this is going on, it’s a good idea to get your hot fat to heating up. You want the temperature to be about 375F. Allow the fat to preheat so it is almost smoking by the time you are ready to add the corn dogs.
Now, to coat the floured hot dogs with batter you have two choices. You can swirl the hot dogs in the bowl of batter until they are coated, and then drop them into the hot fat. If this is a little difficult I know of an easier way. Scoop some of your corn meal batter into a narrow jar or cup which is as tall as your hot dogs are long. Fill the jar or cup about 3/4 of the way full. Dip your hot dog into the batter while you hold onto the stick. Swirl the hot dog to coat it evenly. Be careful or the batter will overflow. Raise the wiener above the cup and let any excess batter drip off. Quickly place the battered dog into the hot fat. The fat will bubble up and cook the outside of the batter, making the corndogs the exact same shape as the ones you buy at the store.
Only fry a few corn dogs at a time. If the corn dogs crowd each other they don’t fry very well. I only fry 2 or 3 at a time. Turn the corn dogs when the bottom side is well browned. Use tongs to remove the cooked corn dogs from the fat. Allow them to drain on paper towels. Repeat the process, coating and frying a few at a time, until all of the corn dogs are cooked. Refill the narrow jar or cup with batter from your bowl as necessary. Continue until all the hot dogs are coated or until you no longer have enough batter to coat the hot dogs efficiently.
If you don’t want to waste any unused batter, it can be dropped by small spoonfuls into the hot fat, and fried until brown. Serve these along side the corn dogs.
If desired, you can make small corn dogs by cutting hot dogs into thirds, or quarters. Poke a toothpick up into the end of the hot dogs. Coat and fry them as described above. These are nice for fancy days, and for kids parties. Provide plenty of ketchup and mustard for dipping.
This recipe makes about 12 to 14 corn dogs.

How to Make Awesome Homemade French Fries…

just like your favorite fast food chain’s! Recently, there has been some discussion about the best way to make homemade french fries that are crispy and yummy just like they make at the restaurants, so I thought I’d share my method. First, the recipe:
Crispy Homemade French Fries
1/3 cup white sugar
2 cups cold water
2 large russet potatoes – peeled, and sliced into 1/4 inch strips
6 cups vegetable oil for frying
salt to taste (I usually use seasoning salt for a better flavor, but regular salt works, too!)
DIRECTIONS
In a medium bowl, dissolve the sugar in cold water. Soak potatoes in water mixture for 30 minutes. Remove from water, and dry thoroughly on paper towels.
Heat oil in deep-fryer to 375 degrees F (190 degrees C). Add potatoes, and cook for 2-3 minutes, yes, the potatoes will NOT be golden brown at this point, don’t worry. Drain on paper towels for at least 5 minutes. Once the fries are thoroughly drained, put them back in the deep fryer for another 3-4 minutes or until golden crispy and light brown. Dump them onto a paper-towel-lined container/counter and QUICKLY salt them to taste. The key is to salt them while the oil is still glistening on the fries, so that the salt adheres to the fries. Allow to drain one minute and then serve.
Tip:If you would like to make fries that can go from the freezer to the fryer just like storebought, simply fry them the first time, allow to drain and cool, place seperately (not touching) on a cookie sheet in the freezer overnight, then once solidly frozen, you can pour them into a gallon size freezer bag and put back in the freezer until you desire to serve them, days, weeks, or even months later. When you pull the fries back out of the freezer, do not thaw, simply fry them for 5-6 minutes in 375 degree oil, then salt and drain as you usually would!
Now the photo of my fries:
